Summary
Tofu is a popular plant-based product traditionally made from soybeans. As soybeans consumed in Europe are often imported, this project aimed to develop a tofu-like product from Swedish raw materials, namely faba beans. Tofu texture was analysed by texture-profile analysis, and tofu gel microstructure by light microscopy and confocal laser-scanning microscopy. The faba bean tofu product's texture and microstructure was similar to that of soybean tofu, however differences were observed. The results indicate that there is potential to produce a Swedish tofu-like product from faba beans, however further research and development is required to achieve a commercialy viable product.
